I love how versatile and forgiving this recipe is and, once you have a basic idea of how long to cook your meat, it’s straightforward to customize it to make it work for your needs. Here are some ways I have customized it or think would work.
Use what you have in the pantry.
Maybe you don’t have chipotle peppers, but you do have jalapenos. Throw those in the pot. Instead of cherry cola, you could use jelly or jam to add some sweetness to compliment the heat of the peppers.
It’s a forgiving recipe.
When you cook low and slow, it’s alright to go even slower as long as there is enough liquid left in the cooker. Set it to cook and then walk away for a few hours. Even if it takes you longer to get back to it, for instance, the kids are fighting, the cows are loose in the yard or the neighbor pops over for a chat, your dinner should still taste wonderful.
There’s a variety of meals it can turn into.
I love potatoes. My favorite version of pulled pork is using it as a topping for baked potatoes, along with butter, cheese, and sour cream. On the other hand, I can’t get my kids to eat potatoes, so I usually just slap theirs on buns with cheese. It’s also wonderful on nachos and in breakfast burritos. Pulled pork freezes well and is great to have on hand to pull out when you need a quick and easy meal.
